Margaret Younathan

Margaret T. Younathan, Professor Emeritus of Food and Human Nutrition, died Friday, November 2, 2012 at Our Lady of the Lake Hospital in Baton Rouge. She was 86. Born in Clinton, Mississippi on April 25, 1926, she was the second child of Mr. and Mrs. P. A. Tims, Sr. She spent her formative years in southern Mississippi, earning a B.A. degree in English from the University of Southern Mississippi in 1946. After a brief career in elementary education, she returned to USM to study Home Economics with a focus in food and nutrition. She received her B.S. degree in 1950, her M.S. degree from the University of Tennessee in 1951, and her Ph.D. from Florida State University in 1958. From 1951 1955, she served as Instructor in Food and Nutrition at Oregon State University, Corvallis, Oregon. In 1962, she joined the Arkansas Department of Health, Little Rock, as a Senior Nutritional Consultant and concurrently served as an Instructor and later Assistant Professor in the Department of Pediatrics, University of Arkansas School of Medicine, specializing in pediatric nutrition. During this time, she developed an intense concern for childhood obesity and its affect on adult health. In 1971, she joined the faculty in the School of Home Economics, Louisiana State University, Baton Rouge, teaching and conducting research for 23 years until her retirement. During her tenure, the school became the School of Human Ecology to reflect its expanding programs, including the addition of a doctoral program for which she developed graduatelevel coursework. In the 1980s, her influence expanded internationally, as she conducted nutrition workshops among the people of Sierra Leone, Africa and in Jamaica. As a published author in peerreviewed journals, Dr. Younathan is best known for her research in lipid oxidation and its effect on offflavor and spoilage of foods. Throughout her career, she maintained certification as a Registered Dietician and was a member of the American Dietetic Association, the American Home Economics Association, the Institute of Food Technologists, and the Louisiana Association of Family and Consumer Science, serving as its District President from 1981 82. A lifelong Christian, Dr. Younathan was a member of First Christian Church Disciples of Christ for over five decades. She is survived by her daughters Janet Younathan, of Lansdale, Pennsylvania and Carol Younathan of Gainesville, Florida her sister Mary K. Tims of Flat Rock, North Carolina and her brother P. A. Tims of Poplarville, Mississippi. She was preceded in death by her husband of 50 years, Ezzat S. Younathan her parents and her halfsister Elise Korpi. Her family extends a special thank you to her caregiver and companion Tommie Lee Jett. A celebration of her life will be held on Wednesday, November 7, 2012 at First Christian Church, 8484 Old Hammond Hwy., Baton Rouge, LA 70809, with visiting hours beginning at 9:30 a.m. followed by a religious service at 11:00 a.m. Interment will be private. Arrangements are being handled by Resthaven Funeral Home. In lieu of flowers, the family requests donations to the LSU Foundation, Dr. Margaret T. Younathan Scholarship Fund, 3838 W. Lakeshore Drive, Baton Rouge, LA 70808, or to First Christian Church Baton Rouge in her memory.
